Our Drinks
We
of course serve and recommend
Ireland's favorite son - Guinness - at any
time of day. This creamy stout is imported from Ireland and is delicious
from first sip to last drop and the next one always tastes better.
Studies show that Guinness can be beneficial to the heart. Researchers
found that antioxidant compounds in Guinness, similar to those found in
certain fruits and vegetables, are responsible for health benefits because
they slow down the deposit of harmful cholesterol on the artery walls.
Why not try something new, Kilkenny a creamy Ale from the same Guinness
brewery. We also stock an extensive wine list for those who prefer the
grape to the grain. Not to mention a full range of soft drinks, coffees
and liqueurs
Whiskey
The history of Whiskey according to Alphonse O’willie
Once upon a time, there was an emerald land, with the purest water and
the finest of grains. But alas these were wasted. The water was used to
quench thirst and the grain to make bread and sustain hunger. A sacramental
waste, that would make many of the emerald folk weep today. But in the
year of our lord 600 ad, a returning monk brought salvation in the form
of a new alchemy. For he had gained much knowledge as he travelled the
world.
With much amazement the emerald folk watched as he dried the grain and
mixed it with the water in a huge copper still. As the liquid came out
of the still, they gathered eagerly to try it, but the monk simply collected
the liquid and started to distill it again. He did this thrice before
the folk could sample it. The first man stepped forward and put his lips
to the cup, he sipped, closed his eyes, turned to the crowd and whispered
the words Uisce Beatha, meaning water of life. The emerald land would
never be the same as whiskey (uisce) had been created!
Many, many years have passed since the returning of the monk and his
name has long since been lost in history. But his gift has remained with
the emerald folk. Though many advancements have been made in the making
of the water of life, they still hold dear the principles taught to them.
To this day all Irish whiskey is still distilled in copper stills and
every last drop is distilled three times. Many lands have tried to copy
the water of life, but none quite have the magic that is……Irish
whiskey
There are three main houses in whiskey Bushmills in the north
and Cooley and Middleton (Jameson, paddy & powers) in the south. But
there is now a fourth upstart with a name to match Feckin Whiskey.
Bushmills
Distillery
Claiming to be the "Worlds Oldest Whiskey Distillery" based
on the undisputed fact that a seven year licence to distil dating from
April 20th 1608 is attributed to the distillery. Located near the town
of Bushmills in Co. Antrim The distillery has had its "ups and downs"
including being destroyed by fire in 1885. It is now currently part of
the Irish Distillers Group having been bought in 1972.
Bushmills produces many fine Whiskeys the most well known being Bushmills
Irish Whiskey (white bush). However they also produce the classic

when the distillery was granted the world's first 'License to distil whiskey'

Irish Barley and crystal clear water, Bushmills is then slowly matured
over many years in hand made oak casks to produce a whiskey whose smoothness,

Midleton Distillery Co. Cork
Situated
in Co. Cork Midleton distillery is responsible for the majority of all
Irish Whiskey produced in Ireland today. It is the Irish Distillers Group
main distillery.
The distillery started life as a woolen manufacturing business in 1796.
By the 1820s the buildings were lying empty until three brothers James,
Daniel and Jeremiah Murphy decided that the perfect purpose for these
fine buildings should be the manufacture of whiskey. Initially run as
a family concern calling themselves James Murphy & Co they ultimately
merged with several other distillers in the area to be come known as the
Cork Distillers Company.
The Midleton Distillery had many advantages being situated in the countryside
not least of which was the low operating overheads as opposed to those
experienced by the City Distillers. A greater advantage was perhaps that
Midleton boasted not only Irelands but the world's largest still with
a capacity of 31,618 gallons.
In
1966 The cork distillers Company joined forces with their city rivals
John Jameson and John Powers together these three formed the Irish Distillers
Group. The newly formed Irish Distillers Group decided that a new all
purpose distillery would be built and Midleton with it room for expansion
was chosen as the site.
The opening of the new Midleton Distillery was impressive, whilst the
new distillery was being built the workers continued their craft in the
old distillery buildings. Then one evening in 1975 they finished work
as usual and left the old distillery. The following morning they returned
not to where they had left the night before but to the new distillery
a few hundred yards away, from here they carried on their craft as if
nothing had happened.

Cooley
The Cooley name, is in Irish distillery terms, a new born infant. Opened
in the late 1980s from what was the Ceimici Teo Distillery in Dundalk
it was renamed Cooley Distillery. Initially the distillery had its challenges
during its early days, not least of which was cash flow problems and the
attempted takeover bid by the Irish Distillers Group. The Irish Distillers
Group intention was to close the distillery down as it somewhat thwarted
their plans of controlling all whiskey produced in Ireland. Eventually
though Cooley found international backing from a number of companies including
Moet-Hennessy.
This strengthened the company and enabled it to rekindle production in
1995. Cooley has since gone from strength to strength including the production
of supermarket brand label whiskeys, a market that had been neglected
by the Irish Distillers Group. Cooley distillery also acquired the John
Lock and Tyrconnell brands names in a marketing bid to sell their products
and in 1996 launched Connemara a pure pot still and Irelands only peated
single malt whiskey. The Cooley whiskeys are shipped by road for their
maturation at the Old Locke's Distillery buildings in Kilbeggan in Co.
Westmeath.
